Carrot muffins with fruit in chocolate recipe

Muffins are a quick way to prepare a delicious dessert that is easy to make. We love them and we have invented the perfect addition to them! Our irreplaceable fruit in chocolate.

We warn you that it is hard not to eat fruit while preparing muffins. :)

Ingredients for carrot muffins with fruit in chocolate:

  • 1 tablespoon of ground flaxseed
  • 2 tablespoons of water
  • 1/2 cup of orange juice
  • peel of 1 orange
  • 1/2 glass of coconut oil
  • 80 ml of maple syrup
  • 200 g of gluten-free flour of two kinds (e.g. millet and buckwheat flour)
  • 1 teaspoonful of gluten-free baking powder
  • 1/2 teaspoon of baking soda
  • a pinch of sea salt
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of spices
  • 2 glasses of grated carrot
  • 1/3 glass of Inca berries or white mulberries in chocolate
  • a pinch of coconut sugar

Preparation of carrot muffins with fruit in chocolate:

  1. Preheat the oven to 180C
  2. Mix the flaxseed with water (it will be a perfect substitute for egg) until the gel consistency is obtained
  3. Add flour, baking powder, soda, maple syrup, orange juice and peel, coconut oil and spices to the bowl
  4. Add grated carrot and selected fruit in chocolate
  5. Stir everything
  6. Place the dough in muffin cups (about 10-13 pieces)
  7. Sprinkle with coconut sugar and cinnamon
  8. Bake for 20 minutes
