Here is the recipe for Wheat-free Pizza bottom:
- We start with the leaven! Pour 100 ml of warm water into a large bowl, add the yeast and 1 tablespoon of sweet syrup (such as maple or agave), and stir vigorously to combine the ingredients.
- After about 2 minutes, add our pizza flour mixture to the leavening mixture.
- Grab a mixer with hooks or trust your hands - mix the dough on low speed until the ingredients are evenly combined.
- Add the olive oil and knead until the dough forms a smooth and elastic ball.
- It's time to take a break for a while! Cover the bowl with a clean cloth and let the dough rise in a warm, quiet place for about 30-60 minutes. The pizza dough should increase in volume by about 50%!
- Preheat the oven to 220°C, turning on the thermo function.
- Transfer the risen dough to a baking sheet brushed with olive oil and spread it evenly with your hand or roll it out. A round baking tray with a diameter of 26-28 cm will be ideal.
- Puncture the top of the dough with a fork so that the pizza bottom bakes evenly.
- Put the dough in the oven and bake for about 10 minutes, until the edges are beautifully browned. If necessary, you can extend the baking time. Don't stress if the cake cracks slightly - this only adds to its character!
- Take out the baked pie, brush it with sauce, add your favorite ingredients and put it back in the oven for another 5 minutes.
