We like to celebrate breakfasts! We live quite intensely every day, so weekend mornings are special for us. And we are trying to make the most of them. First we lie in bed for a long time, then we lazily stretch out and then march to the kitchen to prepare breakfast. A special one!
Today, we are serving scrambled eggs in Ghee butter with fried courgette and tomatoes, sprinkled with spinach LIO Shake. Try them yourselves! :)
Ingredients for scrambled eggs with courgette and spinach (for 2 persons):
- 4 eggs
- Ghee butter
- 1 teaspoon of spinach LIO Shake
- 1/4 courgette
- 8 cherry tomatoes
- Himalayan salt and pepper to taste
Scrambled eggs with courgette and spinach recipe:
- Take out the eggs and beat them in a bowl
- Cut the courgette and cherry tomatoes
- Place the vegetables in a frying pan with hot Ghee butter
- Add the eggs after 2 minutes
- Season with salt and pepper
- Fry the eggs until they thicken
- Place them on a plate and sprinkle with spinach LIO Shake
