Freeze-dried chokeberry powder is a kind of concentrate which contains around 10 times more vitamins and minerals than its fresh counterpart.
Chokeberry is native to the territories of North America. Although it has been in Poland for many years, only recently it has started to enjoy well-deserved popularity and is currently called the Polish superfood.
Chokeberry fruits are small dark-blue berries with an astringent and sweet flavour. They owe their colour to the presence of bioflavonoids which have a range of beneficial properties, for example, they reduce oxidative stress which forms the basis for many diseases and disorders.
Compounds that chokeberry contains such as rutin and anthocyanins protect blood vessels and vision from harmful effects of free radicals. They also lower LDL-cholesterol and provide protection against atherosclerosis. Eating the fruit regularly helps to maintain healthy blood pressure and protects DNA from mutations.
Chokeberry is also high in lutein and zeaxanthin which protect vision from harmful effects of free radicals and can be used for the prevention of macular degeneration and glaucoma.
Chokeberry also contains chlorogenic acid - a strong antioxidant which increases insulin sensitivity and slows down the release of sugar into the blood - thus, chokeberry is the perfect supplement in the diet for diabetics. Moreover, this compound improves immunity, lowers the release of histamine which triggers allergic reactions, has antibacterial properties and lowers the level of lipids in the blood.
The research conducted so far has shown that compounds that chokeberry contains can be helpful in the prevention of neurodegenerative diseases and cancer, for example, colorectal cancer, and when applied topically, they protect the skin from harmful effects of UV.
Freeze-drying (lyophilisation) is a process that works by removing water from the previously freezed product and, at the same time, skipping the liquid phase. While standard drying is conducted using high temperature which destroys a significant number of nutrients in produce, freeze-drying helps to preserve most vitamins, minerals, enzymes, etc. that fresh produce contains. Freeze-dried products have also a similar colour, shape and flavour to fresh produce.
Currently, freeze-drying is one of the best food preservation methods which does not require adding any artificial ingredients. The final water content in the product is around 1 to 2 % what makes that it is very light and is an ideal snack, e.g. during travelling.
How to use:
Freeze-dried fruit can be added to smoothies, porridges, drinks or functional foods. 1 serving: from 1 to 2 teaspoons (5-10 g).
